Happy New Year Everyone. First blog post of 2016! I know long time to post but I am back and got some lovely recipes in store. One of my New Years Resolutions is to try and make as many things myself, so I eat less processed foods and take outs. Not that I ate a lot of it but still, I like the idea of making everything from scratch.

At the moment I am very into soups. In my opinion, they are the best food in winter, nothing warms you up better than a good bowl of soup, am I right? And it warms you up even more, if you add a little bit of kick to it, which I did with this Butternut Squash Soup.

The recipe is super easy and fairly quick to make for a soup. All you will need is a blitzer, you can run the soup through a blender at the very end if you like it a bit more creamy but you don’t have to. I have tried this is with a batch of my soup a few days ago and have to say I was quite impressed about what a difference it made to the texture of the soup, so if you have one, give it a try!

I usually make a big batch of this Butternut Squash Soup on a weekend and then freeze most of it. That way I can have a quick lunch for during the week, just add a slice of bread and you have a delicious lunch.

  1. Preheat your oven to 390 degree fahrenheit. Get all the ingredients ready.

  2. Cut the squash in half and scrape out all the seeds with a spoon, then peel it and cut it into cubes of about 4 cm.

  3. Toss the cubes in a large roasting tin or a baking tray and evenly pour half of the olive oil on it. Use a spoon to mix the squash with the olive oil to make sure it is evenly spread. Then roast the squash for about 30 mins until they soften. Have a look and turn them after about 20 minutes to make sure they don't burn.

  4. In the meantime, peel and dice the onions as well as the garlic (or use a garlic press). Also deseed and finely chop the Chillies, if you are using whole ones.
  5. Melt the butter in a large saucepan and add the remaining olive oil. Then add the onions, garlic and chilli, cover and cook on low heat for 15 - 20 minutes, until the onions are completely soft.

  6. After 30 minutes, take the squash out of the oven, it should be very soft now.

  7. Add the vegetable stock.

  8. Add the sour cream.

  9. Mix everything very well and then blitz with a stick blender until smooth and creamy.

  10. Finish the soup off with some salt and pepper to your taste and serve with a scoop of sour cream on top. Enjoy!
